Fall is upon us and that means it is root vegetable season. While I am missing berries, peaches and fresh tomatoes, I look forward to eating delicious apples, pears, pumpkin, and an abundance of roasted root veggies. Fall root veggies, especially potatoes, are a great way to fuel up with healthy carbohydrates for fall and winter training. Potatoes of all colors are in abundance and our particular favorite is the stunning purple potato, often called the purple majesty.
Just look how pretty this potato is! And this purple majesty has some important health benefits. The purple potato has a considerable amount of anti-oxidants and phytonutrients to help battle inflammation. The purple potato also contains insoluble fiber. Insoluble fiber is beneficial because it can provide a time-released effect helping endurance athletes sustain energy levels. Plus, it provides a good portion of much needed potassium.
